Abstract

Gendar cracker is one of the typical Indonesian snack food raw materials of manufacture of rice and is normally used borax. However, on making crackers this gendar raw materials of manufacture consisting of rice, claw chicken gelatin and starch. This study aims to determine the effect of variation of tapioca starch and gelatin chicken claw with drying temperatures to the characteristics gendar crackers. The experimental design used in this study is a randomized block design (RBD) with factorial pattern of 3 x 3 for 3 (three) times replication followed by Duncan test. Variable trial consists of a comparison of starch and chicken claw gelatin (A) is a1 = tapioca flour : chicken claw gelatin (60%: 40%), a2 = tapioca flour : chicken claw gelatin (65%: 35%), and a3 = tapioca flour: chicken claw gelatin (70%: 30%). Drying temperature variation (B), is b1 (60 ° C), b2 (70 ° C), and b3 (80 ° C). The draft response consists of a response organoleptic (color, aroma, flavor, texture, and crispness), the chemical response (testing the water content, protein content, and starch content), and the physical response (% increase in the volume of development). The results showed variation of tapioca flour and chicken claw gelatin (A) affects the levels of protein and starch content gendar crackers. Drying temperature (B) affects the texture, protein content, and% increase in the volume of development gendar crackers. The interaction between the variation ratio of tapioca flour to chicken claw gelatin (A) and the drying temperature (B) affect the organoleptic response that aroma and texture. However, no effect on the response of chemistry and physics.
