Abstract

The purpose of this study is to looking for Fo stork A type sterilization machine used in processing UHT milk contained in PT Ultrajaya in accordance with BPOM RI regulation No. 24 of 2016 concerning Commercial Sterile Food as well as comparing Fo actual processing conditions according to BPOM regulations. The experimental design used in this study is that the calculation of Fo is guided by the Food and Drug Administration (FDA) by looking for machine operational data, product operational data, looking for reynold numbers, minimum residence time determination. The treatment design to be carried out in this study consisted of two factors, namely the temperature factor consisting of 3 levels, namely 27 oC, 65 oC , 141 oC and chocolate milk product factors per batch consisting of 4 levels, namely batch 0691, batch 0657, batch 0764, batch 0904. The physical analysis carried out is the density test, the viscosity test. The results showed that the value of Fo on the stork A sterilization machine according to BPOM standard No. 24 of 2016 was the sterilization operation temperature of 139.5 oC with a Fo value of 3.0092 minutes which was based on physical response. The Fo value of the actual condition during the sterilization process of brown UHT milk on the Sterideal A Strok machine is achieved according to BPOM regulation with the highest temperature fluctuations of 0.5˚C and with the minimum temperature achieved is 139.7 ˚C.
