Abstract
The purpose of this research is to determine the extent of the influence of the ratio between concentration of concentrate dragon fruit skin and the type of hydrocolloids so that the jelly candy sugar palm fruit produced good characteristic. The benefits of this research are the utilization of dragon fruit skin waste as a natural coloring, diversification of processed products based on local fruit (sugar palm fruit) which is expected to have a functional value from the addition of dragon fruit peels that contain antioxidants and means of information about the process of making jelly candy sugar palm fruit. The experiment design used in this research is a randomized block design (RAK) with 3x3 factorial three times repeated, followed by Duncan’s test. Variables experimental consisted of concentration of concentrate dragon fruit skin (a) with variations 10%, 15%, 20% and the type of hydrocolloids (b) with a variation of agar-agar 2%, caragenan 2%, agar-agar and caragenan 2% (1:1). Response in this research include response chemistry color intensity L* a* b*, water content, crude fiber content, and calcium content and response organoleptic test for color, taste and texture. Analysis on selected samplesincludes total sugar content, activity of antioxidant, texture analyzer. The results showed that the ratio of concentration of concentrate dragon fruit skin impact on color intensity L*, color intensity a*, color intensity b*, water content, crude fiber content, calcium content, color, taste and texture of jelly candy sugar palm fruit. The type of hydrocolloids impact on color intensity L*, color intensity a*, water content, color and texture of jelly candy sugar palm fruit. Interaction concentration of concentrate dragon fruit skin and the type of hydrocolloids impact on color intensity L* and texture of jelly candy sugar palm fruit. a3b3 treatment (concentration of concentrate dragon fruit skin 20% and the type of hydrocolloids agar-agar and caragenan) gave the best results with the sample a color intensity L* 67,53; color intensity a* 5,30; color intensity b* –3,50; water content 19,00%; crude fiber content 1,17%; calcium content 19,20; total sugar content 52,29%; activity of antioxidant IC50 6173,816 ppm; hardness 6558,776 gf; springiness 70,45%.
