Abstract

The purpose of this research was to find out and learn the effect of the ratio of black mulberry and koro bean extract and stabilizer concentration to characteristics of Kobery fruitghurt. This of method used Randomized Block Design (RBD) with 3 x 3 factorial pattern and 3 replications, so that obtained 27 unit treatments. This research consisted of two factors that were the comparison of black mulberry and koro bean extract (1:1, 1:2, 1:3) and stabilizer concentration (0,6%, 0,8%, 1%). The response of this research were chemical response that were protein and lactic acid content, and also organoleptic response (taste, aroma, and color). The result showed that the comparison of black mulberry and koro bean extract and stabilizer concentration significantly affect on protein and lactic acid content. The interaction between the comparison of black mulberry and koro bean extract with stabilizer concentration significantly affect on lactic acid (chemical response) and taste (organoleptic response).
