Abstract

This research has purpose to know the use of the kind of starch and the number of best concreation starch on making nori cassava leaves, and the result is a good product which has a high economic value. The research consist of primaries and main research. Primary research is the determined comparison of water and cassava leaves, and determined treatment (filtering or no filtering) that used to main research on making nori cassava leaves based on inderawi test (hedonic test). Randomized complete Block Design (RAK) with 3x3 factorial and three repetition used in this research. Analysis data were processed by using analysis of variance (ANAVA) and the further test of Duncan. The variables that used is a type of starch (A) that cassava starch (a1), corn starch (a2), and starch sagoo palm (a3) with the concentration of starch (B) that 4% (b1), 6% (b2), and 8% (b3). The results show that choosed treatment on determined comparison of water and cassava leaves based on inderawi test (hedonic test) is 1:5, and choosed treatment on determined treatment (filtering or no filtering) based on inderawi test (hedonic test) is treatment with no filtering. Analysis consisting chemical test that is analysis levels of water (gravimetri method), and levels of crude fiber (gravimetri method), physics test is tensile strength test on choosen sample based on hedonic scale scoring test (a3b2), that is nori cassava leaves using starch sagoo palm with 6% concentration. Nori cassava leaves a3b2 have tensile strength in the amount of 4,62% MPa with an average levels of water 6,77% and levels of crude fiber14,61%. Keywords: Starch, Nori, Cassava leaves.
